Yummy Yummy For My Tummy

Peanut butter and chocolate work great together.  It's one of my favorite combinations.  Chocolate and marshmallow are a great combination too.  I used all three of theses for the cake I made yesterday.


I made this amazing cake to use up the second failed birthday cake I made for myself.  I stuck the cake in the fridge because it was still good.  




It was really pretty last nite, I promise!  When I got up this morning to take a picture for y'all I found it like this.  But you can see the gooey layers of peanut butter, marshmallow fluff, and cake.  Next time I will be baking a one layer cake and not stacking them.  


FlufferNutter Cake
Boxed cake mix (Brownie mix might be good too)
I used chocolate but yellow would make it taste more like a fluffernutter sandwich
1 container of Peter Pan Whipped Peanut Butter (or your favorite peanut/nut butter)

1 container of Marshmallow Fluff

  1. Prepare cake according to directions.  For a lower fat cake you can substitute applesauce or banana for the oil and you can use egg substitute/egg whites for the whole eggs.  Bake in a 9x13 pan.
  2. Put cake together in this order:  Cake, peanut butter, marshmallow fluff


You can make this cake using a fat free cake, pb2 and marshmallow fluff and it would be practically fat free.  Using No Pudge Brownies would be a good alternative too!

Road to the Olympics

Have you been watching the Olympics?  I have.  I've DVR'd all the coverage and I fast forward through the sports that I'm not interested in.  It has surprised me how much Mr. Amazing has gotten into the Olympics.  We watched it last night and he talked thru it amazed by certain things, telling me what he could/couldn't do, and planning his road to the 2016 Olympics.  (I've had mine mine mapped out for about 18 months.)


I think the Olympic Games are a great way to get people, especially kids interested in sports.  I know that during the Olympics I think "I should learn to do that!", "Oh!  I should start practicing doing that," or "That looks like a great workout." atleast once during most of the sports.  I also start working out harder to get their amazing bodies.


It's also been great to be able to introduce Kay, Mo and even Baye to the various sports.  Mo has recently become obsessed with gymnastics so she's been watching that with me.  Kay loves soccer so I'm going to turn on a few of the games for her.  


Maybe one day I'll get to sit at the Olympics and watch one of my daughters compete.  (Yes, I have high hopes for SOMEONE in this family competing in the Olympics.) 


I actually found some research that was done about this.  The SGMA did a study on the Olympic games and participation in various sports.  You can read it all here.  It's really interesting.

Back on Track

First off, I was going to have a recipe for you today but, it wasn't as good as I expected so, I'm not going to post it.

Yesterday a large container with a mixture of peanut and peanut butter M&Ms collided with my mouth.  (They were really good though!)  I'm so disappointed with myself.  This week has been a horrible week for my goals.  I haven't gotten out for my normal workouts due to a 3 year old in my bed every other night and the fact that my lower half has been sore for the past few days.  

Besides gaining a bit of weight I've notice that I'm more tense and grouchy this week.  If this is the way it feels to not workout for 5 days then how am I going to deal with the stress of school and only being able to workout on the weekends?


I've set a new goal date of August 27th.  This is my first day of classes.  I've left my goals the same.  I want to tone up and get my waist measurement down to 27 inches.  That's about 1/2 inch.

Scrambled Post

Has it really been 4 days since my last post?  Wow!  The past 4 days have been really uneventful.  I've never had a time when I haven't found ANYTHING to blog about.  


I'm super excited about August's NaBloPoMo.  It's all about Sweets.  Sweet treats, sweet people, sweet things, everything SWEET!  


But the past few days I've been doing YouTube workouts from a couple blogs I love Bex Life and Blogilates.  Browse through some of their videos and pick out a few.  You'll thank me later.  They're kicking my butt.  I feel superhuman when I'm done tho.  This morning I looked in the mirror and in my mind I was like "I'm a beast!  I can conquer the world!" Has that ever happened to you?


Yesterday's dinner was Fruit Soup, muffins and banana bread.


Here are the recipes:


Fruit Soup
1 Kiwi
1 lb Strawberries
2 Plums
1 container blueberries
Handful of raspberries
1 cup Greek Yogurt
1 cup Orange Juice
1/4 cup (or to taste) sugar-free maple syrup or other liquid sweetener



  1. Roughly chop fruit
  2. Place everything in blender.  If you need to then do it in 2 batches. 
  3. Place in fridge and chill.
  4. Garnish with a few chopped up fruits if you'd like.

Banana Bread (Adapted from Eat Better America: Banana Bread)



1 1/4 cups sugar
2 Tablespoons plain applesauce
3/4 cup egg substitute
1 1/2 cups mashed ripe bananas (I used 4)
2/3 cup nonfat yogurt (I actually used blueberry and it worked REALLY well)
1 teaspoon vanilla
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon cinnamon
1 1/2 cups whole grain cereal (I actually used Baye's Dora cereal.  It was the only whole(ish) grain cereal we had in the house)



  1. Preheat oven to 350 degrees and place racks in the lowest part of the oven.  Coat 2 loaf pans with pan spray
  2. Mix sugar and applesauce.  Add egg substitute.  Mix well.
  3. Mix in bananas, yogurt and vanilla.  Add in dry ingredients except for cereal.
  4. Fold in cereal.
  5. Pour into prepared pans
  6. Bake for 60 - 75 minutes or until a toothpick comes out clean.  Let it cook for 5 minutes then remove bread from pans and let cool completly.  This will take about an hour.

Okay, seriously, I cut into mine about 15 minutes after it came out of the oven.  It was still warm and it was AMAZING!  

Here's the final recipe of the day.  This one is adapted from Finding Joy In My Kitchen

Lemon-Blueberry Yogurt Muffins
  • 1 1/2 C All Purpose flour
  • 1 C Whole Wheat Flour
  • 1 tsp baking soda
  • 2 tsp baking powder
  • 1/2 C sugar
  • 1 C Lemon Greek Yogurt (Nonfat)
  • 1/2 C applesauce
  • 1/4 C Nonfat milk (dairy or non dairy, your choice)
  • 1/4 cup egg substitute (equal to 1 egg)
  • 1 tsp vanilla
  • 1 C blueberries
Directions
  1. Preheat oven to 385.  Coat muffin pans with pan spray or line with muffin cups.  This recipe makes 24 muffins
  2. In a medium bowl blend together all dry ingredients except blueberries
  3. In a separate bowl mix together all wet ingredients.
  4. Stir together wet and dry.
  5. Fold in blueberries.
  6. Spoon into muffin cups and bake for 20-25 minutes until golden.

These were delicious!  I think next time I might add a little lemon zest or lemon juice.  They only had a light lemon flavor when I was going for BAM! in your face lemon.

Diabetics Need Not Apply

Excuse me if this post is a bit scrambled.  I'm in a bit of a sugar coma right now.  I just finished making a lighter (fat free possible) version of my mom's Mississippi Mud Cake.  This is a recipe I grew up eating.  She's made it as long as I can remember.  My mom's version is a chocolate cake with pecans topped with marshmallows and a chocolate sauce.  I'm not a nut fan so I switched it up and made it lower in fat by removing the butter.

Momma's Lightened Up Mississippi Mud Cake

Makes 16 servings 


Cake:
1 cup mashed banana

1/2 cup cocoa

1 cup egg substitute (equal to 4 eggs)

1 tsp. vanilla

2 cups sugar

1-1/2 cups flour

1 cup coconut


Frosting:
1 lb. Powdered Sugar-Unsifted

1/2 cup Skim Milk

1/2 cup Karo Corn Syrup

4 cups Miniature Marshmallows


Directions:

1)Heat oven to 350 and spray a 9x13 pan

2) Mix together cocoa, sugar, flour and coconut

3) Mix banana, egg substitute, vanilla in a separate bowl

4) Blend wet into dry

5)Bake 30 minutes

6) Scatter marshmallows ontop of cake and place back in oven for 3 minutes

7) While cake is baking mix together powdered sugar, cocoa, milk, corn syrup and vanilla

8) Pour frosting ontop of cake and let cool



Here are the nutritionals for this recipe. 
Calories -- 363
Total Fat -- 2.5 grams
Carbs -- 86 grams
Sugar -- 66 grams
 
Please remember, this recipe is NOT low calorie or low in sugar!!  It is low-fat and can be even lower in fat if you remove the coconut.  This dessert is really rich so it could possible make 24 satisfying slices. 
 
After this is gone the family is going back to having lighter desserts.  I started craving this after I made Rice Krispie Treats the way my mom used to make them (a mixture of Rice Krispies and Fruity Pebbles.)
 
Here's a quick tip about Rice Krispie Treats.  You can make them fat-free by substituting the butter for corn syrup, agave, or sugar free maple syrup.
 
I always worry about recreating my mom's recipes.  My mom set such a high bar for food.  She's an amazing cook.  I think that food and family have a big connection.  Normally, (not always) as an adult you eat the way you were fed as a kid. As a kid I was raised on food that was made 95% from scratch.  As an adult I rarely make packaged food.


Dinner tonite was another lightened up version of a favorite from my childhood.  It was Tuna Salad Sandwiches.  I got the recipe from Clean Eating Magazine.




Tuna Salad
INGREDIENTS:
  • 6 oz can or pouch unsalted tuna in water, drained
  • 3 tbsp celery, diced
  • 3 tbsp red onion, diced
  • 2 tbsp carrots, peeled and diced
  • 1/3 cup nonfat Greek yogurt
  • 1 tbsp sweet relish
  • 1 1/2 tsp white wine vinegar
  • 1/2 tsp dried oregano
  • 1/4 tsp parsley flakes
  • 1/8 tsp ground black pepper
  • 4 slices whole wheat bread

INSTRUCTIONS:

Combine all ingredients except bread in a bowl.
Mix thoroughly
Spread 1/2 the mixture onto 2 slices of bread
Top with other bread

Even Mr. Amazing said he couldn't tell that there was no mayo in it.  I think that I have successfully managed to turn him into a healthy eater.  Of course, as soon as I wrote that he says to me "we need to buy a huge bag of M&M's."  Maybe I have a bit farther to go with him.

Cookbooks and Fat Free Mac and Cheese

I got my birthday cookbook yesterday!  I'm so happy.  I've already loaded my August menu with a ton of recipes from the book.

I adore this series of cookbooks.  The other 2 books that David Zinczenko and Matt Goulding wrote, Cook This, Not That and Cook This, Not That Easy & Awesome 350 Calorie Meals, are so worn out from use and they contain cryptic notes about whether or not the girls liked it.  


Grill This, Not That has a ton of recipes.  They have a nice, big seafood and vegetable section.


Dinner tonite was fat-free mac and cheese.  I adapted the recipe from here:
Bobby Deen's Mac and Cheese


Baked Mac and Cheese

Prep Time: 20
Cook Time: 45
Keywords: bake entree Mushrooms pasta cheese


A fat free, lightened up macaroni and cheese recipe. The girls loved it.
Ingredients (approx 8)
  • 4 cups cooked pasta, drained (I used vegetable spirals)
  • 2 cups fat-free shredded Cheddar cheese
  • 1/2 cup skim milk
  • Egg substitute equal to 2 eggs
  • 1/4 cup fat-free sour cream
  • 1 tablespoon Dijon mustard
  • 1/2 teaspoon salt
  • 3 portobello mushroom caps, cut into medium chunks
  • 1 medium onion, diced
Instructions
  • Preheat oven to 350°F.
  • Spray a casserole dish with pan spray.
  • Put chopped onions and mushrooms in large bowl.
  • Cook the pasta, mix in with the onions and mushrooms and add the cheese to the pasta vegetable mixture
  • In a separate bowl mix together the milk, egg substitute, mustard, salt, and sour cream
  • Add the milk mixture to the pasta mixture.
  • Place it all into your greased casserole dish
  • Bake for approximately 35-40 minutes until bubbly and hot

It was delicious and the girls really liked it.  I liked the fact that it wasn't incredibly pasta heavy like a normal mac and cheese is.  I just wish that I had remember to get a picture of it (even though it wasn't pretty at all)

Teaching Kids the Benefits of a Healthy Life

What's the best part of parenting?
I think that the best part of parenting is teaching the girls stuff and I love when the learn new things.  I think it's great when my kids say something to me and I realize that they sound EXACTLY like me.  One of the many things that I've taught the girls over the years is about health and fitness.


Kay can look at a nutrition label and tell me if something is healthy or not.  She will check the labels for me too see how much fat it has.  I have also taught her to cook.  She loves cooking various things.  


Mo is my fitness guru.  She loves to exercise and be active.  She would go workout with me every morning. She's never been a big TV fan so she plays outside a lot.  She's all about getting fit.

Big Decisions

Over the weekend I made 2 decisions that are going to change my life.  


Decision #1
The first decision will probably not come until 2013.  At some point between now and April I will go get my personal trainer certification.  One company offers a 3 day training course.  At the end of the course you take your test.  It's great because I don't have to self-motivate in order to study and do coursework online.  This course costs a bit more but, I don't have to worry about not getting everything done in time and wasting my money.


Decision #2



The second decision is going to be put in effect by the end of September.  I'm going to test out veganism.  I'm doing this due to a comment made by Mr. Amazing.  He simply said that animal products "don't agree" with me.  So I figure I'll give it a try and see how my system reacts to the change.

It's My BIRTHDAY!!

Today started out lovely.  I made up a special birthday HIIT workout.  Since it's my 28th birthday I did 28 second sprints followed by 28 seconds of brisk walking for 4 miles.  Oddly enough each set of 2 miles (2 each way) took me 28 minutes.  How weird is that?


I came home and I was greeted with "Happy Birthday"s from all 3 girls.  I woke up Mr. Amazing after a bit and we went out for a special birthday breakfast at Golden Corral.

My omelet.  They use egg substitute so the eggs were fat free.  I'm better the mushrooms I added were soaked in butter


I have come to the conclusion that our stomachs are not accustomed to the added grease and unhealthy stuff in restaurant food.  After breakfast Kay, Mr. Amazing and I were all sick to our stomachs.   But, after we got home we changed and headed to my favorite place, the beach.  




We only stayed about 2 hours because the wave of nausea started getting worse and Kay and I didn't want to hurl on the beach.  

Oh!  While we were there we also found this :-(


A poor little turtle.  I had Mo put her hand next to it to show how small it was.  


The rest of the day was kind of uneventful.  I had planned on an awesome dinner and a trip to wander around St. Augustine but due to how we felt I made a real simple dinner.  Burgers for Mr. Amazing and Baye, various veggies for me (I allowed Kay and Mo to goto their friends house for a while so they weren't here  for dinner.)


The girls came back after dinner for cake and presents.




Note about my birthday cake:  
Yes, I know it's a pie.  Yesterday was a horrible baking day.  I tried a fat-free cake and it failed miserably.  I made a box mix and lightened it up with egg substitute and applesauce.  No big deal.  When I went to fill it with the fat free 7 minute frosting (same frosting I used for the Independence Day cupcakes) I realized that it tasted like soap.  So it had to be tossed.  I realized that I had wasted money, ingredients and time (almost 1/2 a day) on making my birthday cake.  So I decided that I didn't want to see another birthday CAKE and went and picked up a Lemon Meringue birthday PIE after breakfast.  


So, that's the wrap up of my birthday.  Tomorrow I'm having my special birthday dinner and we're going to take a walk around downtown St. Augustine.  I have turned my 1 day into a 2-Day-Birthday-EXTRAVAGANZA!!

A Small Step in the Right Direction

One small step for me.  One giant leap for my health.   About a week ago I made a small change in my diet.  I replaced the milk in my cereal with nonfat vanilla soy milk.  I feel 10 times better in the mornings.  I've started cooking with it too.  My body feels lighter and healthier.  I feel a lot more energized after my workouts.  I did this because I noticed that in the evenings when I dip into my daughters' ice cream I felt icky afterwards.  Not just in an "I-ate-too-much-ice-cream" sort of way but in an icky tummy sort of way. 

I started using it because I wanted to use up the soy milk I bought for the (award winning) Independence Day vegan cupcakes.   I would switch my yogurt to soy if they made a fat free version.

Now for a segment called What I Ate Wednesday (W.I.A.W)  This is where you get to see everything I ate over a course of a day.


Breakfast
A banana and some Crispy Rice cereal with blueberries, vanilla soy milk and a bit of sugar


Lunch
My sad lunch.  Half a cookie and a banana.  I know, I'm bad...


"Sausage" Meatballs

These were the Light Life Ground Sausage meatballs I made for dinner.  Simple recipe:  1 roll of Light Life Ground Sausage, 1/4 of an onion diced, and a diced jalepeno.  Mix it all together and roll it into balls.  I got 16 out of it.  Pop them into a 350 degree oven for about 20 minutes until they're a little brown and enjoy!  

 Dinner.  A nice little salad, meatballs and roasted brussel sprouts covered with fat free pepperjack cheese.  Delicious!!

Baye's dinner.  Meatballs, carrots, yogurt and some Babybel cheese.


Dessert.  Huge slices of watermelon.  Unfortunately I didn't rinse off the board before slicing it so I had jalapeno watermelon.  It was actually quite interesting.

Soreness

So today I'd like to start with my prompt for the day.  
Bubble wrap -- do you love to pop it? Who DOESN'T???  I always pop a few before I let the kids have it.  Then I pop the leftover bubbles when they're done.  


If you read my post from yesterday you heard about how I got tossed around by the ocean for a few hours with my daughter.  Today I am so sore.  I still got up and did my workout though. 

Tomorrow I will be (hopefully) doing my first  What I Ate Wednesday (WIAW)!  Kinda excited.

It's the End of the World!!

The end of the world HAS to be coming soon.  I slept until 7 this morning!  This is a VERY rare occurrence for me.  Normally I wake up when my alarm goes off at 5:15 in the morning and I'm up for the day.  Every so often though I fall back asleep and wake up at a normal time.

So I obviously missed my morning workout.  I made up for it though.  I took Kay and her friend down to the beach and I got in the water with them.


Oh.My.Gosh!  I completely forgot how much the ocean tosses you around and how much energy in takes to fight the waves.  But, we had a great time!  Plus, I'm guessing for the 2 hours we were there I burned about 500 calories.  Not bad for 2 hours of fun right?


Now to get ready for sushi night...

Frozen Pumpkin Dessert

I make some obscure things in order to use stuff up.  Today it was Marshmallow Fluff.  I'm addicted to the stuff so I needed to get it out of my pantry.

Kay asks me every so often to make a pumpkin cheesecake so I made this instead.


Frozen Pumpkin Dessert
16 oz jar Marshmallow Fluff
4 oz cream cheese, softened
1/4 c brown sugar
15 oz can pureed pumpkin (NOT pumpkin pie filling)
1/2 T pumpkin pie spice

  1. Mix ingredients together in a bowl
  2. Freeze for 4 hours
When I served it I put  a few animal crackers in the bowl and sprinkled it with cinnamon (per Kay's request.)

I haven't figured out the calories for it yet.  Honestly I don't think I really want to know in case it's not as healthy as I think it is.  It's fat free though.

You know what helps you cut calories besides fat-free desserts?  Your 3-year-old puking in the middle of lunch AND dinner.  Yeah, my poor baby was feeling crummy this afternoon.  After we got home from the beach she threw up while Kay, Mo and their friend were eating lunch.  After nap she spiked a fever of 102 THEN she threw up again at the dinner table.

I feel so bad for my sick baby.  Don't you hate when your kids get ill?

Finally!! A Day to Relax

It was nice that I could just relax today after running around all week.  

I got up this morning and went to the beach for my workout.  I've started doubling the reps of everything except the sprints.  10 burpees, 20 jumping jacks, 10 pushups...you get the idea.  If you're new to my blog this is the workout I'm refering to:


After finding out that my Best Buy Geek Squad warranty expired on June 26th instead of July 9th I moped for a bit then took the kids to the beach.  I knew that if I stayed at home I'd munch for half the afternoon then hate myself for it later.

I had been craving sauerkraut a while back so I bought a big bottle while at Publix one day.  Since I bought it I've been trying to find various ways to use it besides on top of hot dogs.  My Publix doesn't carry fat free vegetarian hot dogs so I make weird mushed up mushroom and onion dogs.  Maybe I need to invest in a meat grinder/sausage stuffer for my KitchenAid.

ANYWAYS, back to the topic at hand...

Tonite I made myself a vegetarian reuben with homemade thousand island dressing.

It's really simple.

Vegetarian Reuben
8 oz mushrooms, sliced
1/2 large onion, diced
2 slices low calorie bread (preferably whole wheat)  {I used Sara Lee 45 calorie bread}
 butter/margarine {I used Parkay spray margarine}
4 slices fat free Swiss cheese 
1/4 c sauerkraut
2 T homemade Thousand Island dressing (recipe follows)

  1.  Spray skillet with pan spray and heat over med-high heat
  2. Sautee onions and mushrooms until soft (if they start to stick add a bit of water or vegetable broth to the skillet as needed)
  3.  Spread butter on one side of each slice of bread
  4. On opposite side spread Thousand Island
  5. Lay down 2 slices of cheese on the Thousand Island side of each piece of bread so it covers all of the bread, put mushroom, onion blend on top of cheese, add sauerkraut, Put the second bread and cheese layer on top of sauerkraut
  6. Heat skillet again over medium heat and spray with pan spray
  7. Place sandwich in skillet cook on first side until brown, flip the sandwich over and cook until second side is browned and cheese has melted

Thousand Island Dressing
1/4 cup fat free mayo
1 T ketchup
1/2 T vinegar (I used white balsalmic but any clear, light vinegar will work)
1/2 T sweet pickle relish
Sprinkle dried minced onion

  1. Whisk everything together in a bowl

I realized yesterday that I substiute mushrooms for beef in MOST recipes.  Recipe calls for ground beef?  Diced mushrooms!  Recipe calls for steak?  Sliced mushrooms!  Mentally try substituting mushrooms for beef in recipes.  It works.

A week in a Day Post

I'm so happy that this week is over.  Every nite since the 25th the girls have been practicing for the Independence Day "Swim Show" at the neighborhood pool.  It was really cute and they had a blast.

Starting July 1st I was planning on posting a different fat-free cheesecake recipe every day.  I tested the recipe and it wasn't up to my standards so I'm currently tweaking it so that I can post it for you.  

I didn't reach my goals for Independence Day (i.e. my anniversary) but, I've decided to start my goal over for my birthday.  I need to lose 5 lbs in 9 days or get down to 27 inches.  

My fat free cupcakes won 1st place in the community cake contest.  I made chocolate zucchini cupcakes with a marshmallow fluff icing.  I got the cupcake recipe from the Happy Herbivore.  I have a feeling I've already posted about these before but, here's the links for the recipes.   



And of course we had a great anniversary dinner of shrimp, crab cakes, and corn.  We also watched fireworks from the beach.  



Sorry, I just had to post some photos of me and Mr. Amazing.  My normal vegetable people weren't at the farmers market today so I didn't get anything.  =(  I think that about sums up my week.  Now for the prompt for today:

Honestly I let them know.  Normally my jokes are along the lines of "I'm pregnant" or something semi-possible.  So I'm quick to admit that I'm kidding.

Busy Busy Busy

I'm sorry I haven't posted in a while.  I promise I will be back with my regularly scheduled Farmers Market Friday post tomorrow.  I've been super busy with the girls rehearsal for the Independance Day Water Show at the community pool and getting ready for Mr. Amazing and my anniversary.
